This Smoked Salmon Benedict with Avocado is gluten-free for my celiac friends!

One thing I absolutely LOVE about living in San Francisco, is how seriously people take brunch! San Franciscans have definitely gotten brunch & day drinking down to a science. Some popular restaurants are only open for brunch, 9am-3pm. It’s so popular they are able to shut their doors in the afternoon and probably laugh amongst themselves at all of the patrons nursing their hangovers with bottomless mimosa’s.

The people watching in these line ups are pretty amusing to say the least! If you were to ask some of these people to wait 3 minutes for an uber, 10 minutes for a drip coffee or behind 3 people at Trader Joe’s; forget it! However,  if you ask them to wait in line for over an hour at their favorite local brunch spot, they will do it with pleasure! I’m touched by the commitment and my fiancé & I partake in brunch shenganigans once a week. On the other day, we enjoy a leisurely brunch at home.

Today I was super excited to try a new brunch recipe for the blog! Eggs Benedict is without a doubt my favorite brunch item but it’s pretty unhealthy! I wanted to create a lighter recipe that would still satisfy my craving for this high fat dish. I also opted to make a gluten free benny for my celiac friends out there. Whaaat whaaat!

Smoked Salmon is a great source of healthy oils and fats, dietary protein and iron but like everything else, moderation is key. Even though there are many wonderful benefits of eating smoked salmon, it is rather high in sodium, so don’t eat it all day, everyday. Alright?

Removing the english muffin and swapping it with avocado is such an easy way to get rid of unhealthy carbs. I’m trying to eat less bread these days and the struggle is definitely real, but with this dish I didn’t miss it! This Smoked Salmon Benedict with Avocado was all I dreamed of and more. My fiancé is already asking me to make it again next weekend.

Smoked Salmon Benny with Avocado

This is a great low carb & gluten free alternative to Eggs Benedict! Try this recipe at home this weekend!

Serves: 2
Ingredients
  • 5 ounce piece of smoked salmon, divided in two pieces
  • half an avocado, sliced lengthwise
  • 2 eggs, poached
  • 2 tsp white vinegar
  • 1 tsp salt
  • salt & fresh ground pepper, to taste
  • 1 tbsp minced chives to garnish
Instructions
  1. Add enough water to come 1 inch up the side of a narrow, deep 2-quart saucier.
  2. Add 1 teaspoon kosher salt and 2 teaspoons white vinegar and bring to a simmer over medium heat.
  3. Meanwhile, crack 1 cold large egg into a small dish or bowl.
  4. Use the handle of a whisk or spoon to quickly stir the water in one direction until it's all smoothly spinning around.
  5. Carefully drop the egg into the center of the whirlpool. The swirling water will help prevent the white from "feathering," or spreading out in the pan. This 'whirlpool method' only works for 1 or 2 eggs. If you're making a larger batch, do not stir each time you add a new egg.
  6. Turn off the heat, cover the pan and leave for 5 minutes. REALLY leave it for 5 minutes. As in don't lift the cover and peak! This will ruin your poached eggs!
  7. While eggs are poaching, slice avocado and place 3 flat piece of avocado on a plate.
  8. Place a piece of salmon on the avocado.
  9. Using a slotted spoon, remove the poached egg from the sauce pan and place on top of the salmon.
  10. Top with Herbed Crème Fraïche Dressing and minced chives!
  11. Enjoy!
  12. Lift it out: Remove the egg with a slotted spoon and serve immediately. Alter

SERVE THIS FAMILY STYLE AT A SUNDAY DINNER

Did you know the United States is the biggest importer of summer squash? I didn’t! Until last week when another shopper at the farmers market told me. I thought they must of been misinformed but as I researched, I realized most of our squash does come from Mexico. Like the VAST majority comes from Mexico. We do grow a small percentage locally; Florida, New York and California producing the most.

Summer squash comes in a variety of shades of yellow, green and even white. I love working with pattypan and sunburst squash like the ones used in this recipe. I can only get my hands on them in the summer so I look forward to them every year. They are made of up of mostly water(95%), are low in calories and are good sources of vitamin A & C.

Another way I like to enjoy summer squash is grilled with eggplant and peppers.  I serve the grilled veggies family style and drizzle them with roasted garlic extra virgin olive oil. It reminds me of happy days in Europe with my fiancé, visiting with his family and falling in love with the Mediterranean style grilled vegetables. I think I ordered them as a side for lunch and dinner every night; not even kidding.

Anyway, back to this bomb diggity summer squash gratin. The original recipe calls for zucchini but I decided to sub for seasonal summer squash. I was really happy with the way things turned out. A couple things about this recipe, I wanted to share with you..

-Salt your squash! Summer squash is made up of 95% water and its all going to come out when cooked. To avoid a runny gratin place the slices of squash in a colander lined with a clean kitchen towel. Liberally sprinkle kosher salt over the squash and let it sit for 15 minutes to draw out the moisture. Depending on the amount of liquid either pat dry using a towel or apply pressure to strain using the colander.

-In my opinion the nutmeg sets this dish OFF! It’s a must have in this dish for sure so don’t skip it.

-I know it seems like a lot of onions but they will soften as they cook down. Trust me, it will work.

-The gruyère in this recipe is on point but feel free to sub fontina or whatever you have in the fridge.

This summer squash gratin recipe is a favorite in my house! A lot of people request this when they come over for a meal. I like to serve it family style for a casual lunch or dinner.

Ingredients
  • 6 tablespoons (3/4 stick) unsalted butter, plus extra for topping
  • 1 pound yellow onions, cut in ½ and sliced (3 large)
  • 2 pounds summer squash or zucchini, sliced ¼-inch thick (4 zucchini)
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • ¼ teaspoon ground nutmeg
  • 2 tablespoons all-purpose flour
  • 1 cup hot milk
  • ¾ cup fresh bread crumbs
  • ¾ cup grated Gruyere
Instructions
  1. Preheat the oven to 400 degrees F.
  2. Melt the butter in a very large (12-inch) sauté pan and cook the onions over low heat for 20 minutes, or until tender but not browned.
  3. Add the zucchini and cook, covered, for 10 minutes, or until tender.
  4. Add the salt, pepper, and nutmeg and cook uncovered for 5 more minutes.
  5. Stir in the flour. Add the hot milk and cook over low heat for a few minutes, until it makes a sauce. Pour the mixture into an 8 by 10-inch baking dish.
  6. Combine the bread crumbs and Gruyere and sprinkle on top of the zucchini mixture.
  7. Dot with 1 tablespoon of butter cut into small bits and bake for 20 minutes, or until bubbly and browned.

Except for mayyyyybe this cupcake! This bad boy is pretty much perfect. I’m so happy I stumbled upon this recipe the other day while going through old pages I had ripped out from magazines. Coming from a girl who isn’t crazy about cupcakes; you need to try these! Maybe the reason I love them so much is because they’re not too sweet. The lemon zest+ricotta+crème fraîche really bring something different to the table. These may be the best cupcake I’ve ever had!

Ingredients
  • FROSTING
  • One 8-ounce package cream cheese, at room temperature
  • 6 tablespoons unsalted butter, at room temperature
  • 1 tablespoon finely grated lemon zest, plus more for garnish
  • ½ cup honey
  • 2 teaspoons pure vanilla extract
  • ⅛ teaspoon kosher salt
  • CUPCAKES
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon kosher salt
  • ⅔ cup honey
  • ½ cup fresh ricotta cheese
  • ½ cup vegetable oil
  • 2 tablespoons finely grated lemon zest
  • 1 tablespoon pure vanilla extract
  • 2 large eggs
  • 1 large egg yolk
  • ¾ cup creme fraiche
Instructions
  1. Make the frosting in a medium bowl. Using a handheld electric mixer, beat the cream cheese at medium speed until light and creamy, about 3 minutes.
  2. Scrape dow the side of the bowl. Add butter and 1 tablespoon lemon zest and beat until incorporated.
  3. Beat in the honey, vanilla and salt.
  4. Cover and refrigerate until firm and spreadable, about 3 hours.
  5. Meanwhile lets make the cupcakes..
  6. Preheat the oven to 350. Line a 12 cup muffin pan with paper liners.
  7. In a medium bowl, whisk the flour with baking powder, baking soda and salt.
  8. In another medium bowl, whisk the honey with the ricotta, vegetable oil, lemon zest and vanilla
  9. Whisk in the eggs and yolk
  10. Whisk in one-third of flour mixture just until incorporated, then whisk in half of the creme fraiche until smooth, scrapping down the side and bottom of the bowl with a spatula.
  11. Fold in the remaining flour mixture in 2 batches, alternating with the remaining creme fraiche until well incorporated.
  12. Spoon the batter into the muffin cups and bake for about 25 minutes, until the cupcakes are lightly golden and a toothpick inserted in the center comes out clean.
  13. transfer the cupcakes to a wire rack and let cool completely.
  14. Frost the cupcakes and garnish with lemon zest.
