I suck at breakfast! There is no denying it anymore. My fiancé is always getting on my case about not eating breakfast and he’s starting to sound like a broken record (it’s been almost 3 years). I know it’s super important but it’s always been difficult for me to eat in the morning. For years my daily breakfast of champions consisted of a large coffee with cinnamon and maybe a banana when I’m flying. Don’t judge! I’m challenging myself to break this habit so be prepared to see more breakfast posts from me.

I like to serve this with a simple cucumber and avocado salad with sriracha greek yogurt dressing.

Let me just say I love a recipe that gives you a ton of freedom to modify ingredients depending on what you have available. Bacon & Egg Baked Breakfast Cups is absolutely one of those recipes. You can use a variety of ingredients: mushrooms, onions, peppers, tomatoes, spinach and cheese to name a few. This weekend I used my leftover Sautéed Shishito Peppers and they were stellar diced up and added to this recipe.

Another thing I love about this recipe is how easily you can cater to individual preferences. Maybe someone dislikes mushrooms or wants to include every vegetable known to mankind. You can put whatever you want in each muffin cup and everyone will be happy at breakfast. This recipe is equally convenient if your cooking for one or feeding a family of five. This recipe is simple enough that you can easily adjust the ingredients depending on the number of mouths you need to feed.

I’ve experimented with this recipe quite a bit because the first time I made it, the yolks were too hard and the bacon was undercooked. Well that’s just not going to fly. Challenge accepted!

After I line around the muffin tin with a slice of bacon, I bake it in the oven for about 10 minutes to jump-start the cooking process. The bacon takes longer to cook than the eggs so I precook the bacon to end up with a crispy outer shell. I also prefer to scramble each egg individually in a small bowl and add 2 tbsp of whatever ingredient before adding to the muffin tin. I prefer the texture and find everything cooks more evenly if it’s mixed together. This is totally personally preference.

Enjoy Bacon & Egg Baked Breakfast Cups this weekend for brunch and then take them to go for breakfast during the week. It's the meal that keeps on giving! Set yourself up for success and don't skip breakfast!

Ingredients
  • 12 eggs
  • 12 slices of bacon (I use applewood smoked)
  • 1.5 cups total or 2 tbsp per muffin tin of your desired ingredient(s)
  • salt & pepper to taste
Instructions
  1. Preheat oven to 400 degrees
  2. Line each muffin cup with a piece of bacon
  3. Put bacon lined muffin tin in the oven and bake for approximately 10 minutes. You want the bacon to look half cooked before adding the eggs.
  4. While bacon is in the oven prepare your desired add in ingredient(s) like peppers, mushrooms etc. You should allocate for 1.5 cups total or 2 tbsp per muffin cup.
  5. In a small bowl lightly beat 1 egg and add 2 tbsp of desired ingredient(s). Pour egg mixture into bacon lined muffin cup and repeat the process for each egg.
  6. Bake for 20 minutes or until done. Everyone likes their eggs cooked differently so take a peak at about the 15 minute mark. They might be done to your liking!

Being from Nova-Scotia, loving shell fish like lobster, scallops and mussels is practically in my DNA.  I recently returned from a blissful vacation back home on the East Coast, where we indulged in all of my favorites.  

Mussels were a staple in my house growing up and I always loved dunking them in garlicky lemon butter. It’s funny how nothing really changed (well maybe my glass of sauvignon blanc). This humble East Coast favorite has continued to be a special dish into my adulthood. It was the first meal I ever made for Rez and whenever I make it at home it brings back happy memories, both old and new.

At the time I was living in Vancouver and we had been dating long distance for a couple of months. We had met in Hawaii Thanksgiving weekend, had our first date in Montreal on NYE and in January I went to visit him in San Francisco. It was quite the whirlwind! Now it was his turn to come see me in Vancouver and not on buddy pass!

Side note for those of you who are not in the airline industry: Although our career allows us to travel freely and cheaply, long distance relationships can be equally or more taxing on our end. When you fly for a living, doing all of the commuting in a long distance relationship can be draining, especially when it’s not appreciated. It’s a test in a way, to see if they’re willing to put in the work and not ask for the ‘golden ticket’ immediately.

Rez was due to arrive right around lunchtime so I decided to make him an old school favorite of mine; Mussels. They’re easy to make, use few key ingredients and are rather addicting once you sample a few. The broth is really what ties everything together, with thick slices of fresh bread for dipping. This certainly isn’t a fancy dish and that’s part of its glory!

Served best with thick pieces of fresh bread. The bread takes it from appetizer to entrée.

We’ve created a tradition of staying in for big nights like Valentines Day or Anniversaries. We get our favorites wine & foods and spend the night at home, instead of going to super crowded and loud restaurants. Don’t get me wrong, I love those places and I’m actually late getting ready to go out for dinner & drinks. But those special nights I like being at home, hidden away from the craziness of the city, with my favorite person in the world, in our own private retreat. We always include mussels in the mix on those special days. One of us always reminding the other of that first home cooked meal together.

Ingredients
  • 3 pounds mussels, scrubbed and de bearded
  • ¼ cup butter, ½ stick
  • 1 fresh fennel bulb, thinly sliced
  • 2 shallots, chopped
  • 4 garlic cloves, chopped
  • 2 teaspoons fennel seeds
  • ½ bottle dry white wine
  • ½ cup heavy whipping cream
  • a small handful of flat leaf parsley
  • garnish with lemon wedge
Instructions
  1. Melt butter in heavy large pot over medium-high heat.
  2. Add chopped fennel, shallots, garlic and fennel seeds. Sauté until fennel is tender, about 5 minutes. Add wine and cream and boil until liquid thickens, about 10 minutes.
  3. Add mussels. Cover and cook until mussels open, about 5 minutes. Discard any mussels that do not open. Ladle broth overtop and sprinkle with flat leaf parsley.
  4. Garnish with lemon wedges and serve with fresh bread!
  5. Enjoy!
Notes
Before cooking I always sift through the mussels to check for any damaged and cracked shells.
Once mussels are cooked I discard any mussels that do not open.
I normally serve this family style at home but feel free to separate into individual bowls and ladle the broth overtop.

This recipe is so simple and oh so delicious. 15 minutes start to finish and virtually zero cooking. Pistachio Crusted Baked Brie with Honey is such a versatile dish. I picture serving this up for my girl friends over wine, a tapas style dinner at home or as an afternoon snack on a chilly day.

I’ve been busy studying for my annual re-qualification exam and drills. As flight attendants, we have to do this once a year and it’s always super stressful! Why? Because if you don’t pass, you no longer get to fly the friendly skies. That’s right; your job is on the line. This will be my 5th annual and you would think it gets easier, but it doesn’t.

I woke up a couple of nights ago shouting my evacuation commands. In my dream, I was evacuating an aircraft with a fire in the cabin and my exit was blocked due to water. Just lovely! My fiancé was terrified but quickly realized what was going on. If you’re close with any flight attendant I’m sure you’re aware; we can go a little crazy when our annual training creeps up.

Anyhoo, the next day I was exhausted from lack of sleep and didn’t have the energy to cook. I wanted something low maintenance, quick and warm for dinner. I opened the cheese drawer (because cheese is always the answer) and found a piece of wild mushroom brie. Boom! That’s where this idea spiraled from.

Make sure to coat all sides of the brie with honey. This will make it easier for the the pistachios to stick to the brie.

It’s better to have an entire wheel of brie because it helps keep the ooey-gooey-goodness inside, but I wanted to use what I already had in the fridge. Remember, lazy and tired? No grocery store tripping for this lady. Just keep in mind, an entire wheel looks prettier and more put together. If you’re entertaining; I would suggest going that route.

Remember not to go overboard with pulsing the pistachios. A quick pulse is all you need. You still want the texture of the pistachios. Pistachio dust is not what you’re going for with this recipe.

I served this with fresh bread, prosciutto, apple slices and green grapes. It was such a great, casual dinner! You can’t go wrong with a 15 minute, easy peasy dinner that tastes like a million bucks!

This salty and sweet baked brie is the perfect thing to warm you up on a chilly day. It's super simple, with only 4 ingredients and only takes 15 minutes from start to finish!

  • 1 wheel of brie, size can vary but I generally use a small one
  • ½ cup good quality honey
  • ⅓ cup shelled pistachios
  • crusty bread or sliced apples for serving
Instructions
  1. Preheat oven to 350 degrees
  2. Pulse pistachios in the food processor for a couple of seconds. You want to break down the pistachios but you still want texture. You do not want pistachio dust!
  3. Heat the honey in the microwave for 30 seconds. Pour over the brie cheese, making sure you cover all sides.
  4. Start sprinkling the honey covered cheese with pistachios. It's not a big deal if they don't all stick; just try the best you can.
  5. Top with pistachios and bake in the oven for 10 minutes
  6. Let it cool for a few minutes and then serve with bread or apple slices

One thing I absolutely LOVE about living in San Francisco, is how seriously people take brunch! San Franciscans have definitely gotten brunch & day drinking down to a science. Some popular restaurants are only open for brunch, 9am-3pm. It’s so popular they are able to shut their doors in the afternoon and probably laugh amongst themselves at all of the patrons nursing their hangovers with bottomless mimosa’s.

The people watching in these line ups are pretty amusing to say the least! If you were to ask some of these people to wait 3 minutes for an uber, 10 minutes for a drip coffee or behind 3 people at Trader Joe’s; forget it! However,  if you ask them to wait in line for over an hour at their favorite local brunch spot, they will do it with pleasure! I’m touched by the commitment and my fiancé & I partake in brunch shenganigans once a week. On the other day, we enjoy a leisurely brunch at home.

Today I was super excited to try a new brunch recipe for the blog! Eggs Benedict is without a doubt my favorite brunch item but it’s pretty unhealthy! I wanted to create a lighter recipe that would still satisfy my craving for this high fat dish. I also opted to make a gluten free benny for my celiac friends out there. Whaaat whaaat!

Smoked Salmon is a great source of healthy oils and fats, dietary protein and iron but like everything else, moderation is key. Even though there are many wonderful benefits of eating smoked salmon, it is rather high in sodium, so don’t eat it all day, everyday. Alright?

Removing the english muffin and swapping it with avocado is such an easy way to get rid of unhealthy carbs. I’m trying to eat less bread these days and the struggle is definitely real, but with this dish I didn’t miss it! This Smoked Salmon Benedict with Avocado was all I dreamed of and more. My fiancé is already asking me to make it again next weekend.

This is a great low carb & gluten free alternative to Eggs Benedict! Try this recipe at home this weekend!

Serves: 2
Ingredients
  • 5 ounce piece of smoked salmon, divided in two pieces
  • half an avocado, sliced lengthwise
  • 2 eggs, poached
  • 2 tsp white vinegar
  • 1 tsp salt
  • salt & fresh ground pepper, to taste
  • 1 tbsp minced chives to garnish
Instructions
  1. Add enough water to come 1 inch up the side of a narrow, deep 2-quart saucier.
  2. Add 1 teaspoon kosher salt and 2 teaspoons white vinegar and bring to a simmer over medium heat.
  3. Meanwhile, crack 1 cold large egg into a small dish or bowl.
  4. Use the handle of a whisk or spoon to quickly stir the water in one direction until it's all smoothly spinning around.
  5. Carefully drop the egg into the center of the whirlpool. The swirling water will help prevent the white from "feathering," or spreading out in the pan. This 'whirlpool method' only works for 1 or 2 eggs. If you're making a larger batch, do not stir each time you add a new egg.
  6. Turn off the heat, cover the pan and leave for 5 minutes. REALLY leave it for 5 minutes. As in don't lift the cover and peak! This will ruin your poached eggs!
  7. While eggs are poaching, slice avocado and place 3 flat piece of avocado on a plate.
  8. Place a piece of salmon on the avocado.
  9. Using a slotted spoon, remove the poached egg from the sauce pan and place on top of the salmon.
  10. Top with Herbed Crème Fraïche Dressing and minced chives!
  11. Enjoy!
  12. Lift it out: Remove the egg with a slotted spoon and serve immediately. Alter

This Mostly Veggie Tuna Melt will never go out of style. Ode to a classic!

Tuna melts and tuna salad on fresh greens is definitely a regular in house. It’s something you can whip up quickly and modify the ingredients based on what you have.

My fiancés idea of comfort food is a nice creamy tuna melt and he’s as happy as a little clam when I make this for him. He’s going to kill me when he reads this.

I like my tuna salad with a lot of crunch so I always use celery & fennel. Remember to hang on to those fennel fronds at the top of the fennel bulb. They look & feel similar to dill but have a delicate anise flavor. We’re going to sprinkle those on top of the tuna melt as a finishing touch that will melt in your mouth.

I also add an apple to the mix for some sweetness and because it pairs really well with the fennel. I usually add more celery+fennel+apple than what I’ve listed  because I try to pack in as many veggies as I can without Rez asking questions.

The fennel lends massive amounts of flavor to this recipe and honestly, it’s just not the same without it. As I’ve mentioned in other posts, fennel is one of my go-to ingredients and definitely a useful ingredient to keep on hand.

I dice one of my Garlicky Dill Pickles, fresh dill, as well as some dill seeds to really amp up the bold flavor. In a pinch you can sub dry dill for fresh dill, but be sure to half it and let the mix sit in the fridge for an hour or so, allowing the flavors to marry together.

I normally opt to serve this over mixed greens or peppery arugula because frankly, I just like it like that, but this an awesome gluten free option for my celiac friends or people watching their carb intake. This is a super comforting dish and fairly guilt free, especially if you use greek yogurt instead of mayo!

Try this classic recipe with a bowl of Lazy Pea Soup with Mint & Crème Fraîche, Speedy Greek Style Chicken Soup with Lemon or Cream of Wild Mushroom Soup.

Ingredients
  • 1 can tuna, drained
  • 4 slices of whatever bread you like
  • 2 large celery stalks, finely chopped
  • ¾ cup fennel, finely chopped
  • 1 apple of your choice, cored and diced
  • 1 large dill pickle, diced
  • ½ cup red onion, finely chopped
  • ½ cup dill, chopped
  • ½ tsp dill seeds
  • ½ cup extra sharp cheddar cheese, grated
  • squeeze of fresh lemon juice
  • ¼ cup prepared mayo or full fat greek yogurt
  • 1 tsp black pepper
  • kosher salt to taste
  • fresh fennel fronds for sprinkling
Instructions
  1. Preheat the oven broiler and set the rack about 5 inches from heat source.
  2. Spread slices of bread on baking sheet and toast.
  3. Combine all ingredients in a large bowl (with the exception of cheddar cheese) and toss until all ingredients are coated in mayo/greek yogurt.
  4. Distribute the tuna salad mixture on top of the toasted pieces of bread and sprinkle with cheddar cheese.
  5. Place under the broiler for 3-5 minutes.
  6. Season with salt & pepper and garnish with fresh fennel fronds or dill.
Notes
Makes 4 open face sandwiches.
Remember to save the fennel fronds. They make a nice finishing touch to the tuna melts.

Edamame & Arugula Spread is a great alternative to the popular Bruschetta

Crostini has always been one of my favorite go to appetizers. They’re easy & quick to make and are a heartier cocktail hour food. If you’re coming over to my house odds are there will be some cocktails or wine involved. I always want to have some appetizers on hand to soak up the alcohol. Don’t judge! I confess that normally I make my heirloom tomato bruschetta but I felt like switching things up. This Edamame & Arugula Spread was the perfect option!

Arugula is in season right now and I love it’s peppery, bold taste. It’s part of the cabbage family and contains a HUGE amount of lutein, an antioxidant that helps maintain healthy eyes, skin and heart. Arugula doesn’t keep very well so try to buy it and use it up within 2 days, 3 max

I use arugula on its own in salads or in addition to another greens. I love it in soups, on homemade pizza or in my pasta. My absolute favorite is subbing it for basil to make a spicier pesto! When cooked, arugula wilts like spinach so keep that mind when experimenting in your kitchen.

Try this spread over baked parmesan crisps instead of  baguette for a different approach.

Edamame & Arugula Spread

Ingredients
  • 1 cup shelled fresh or frozen edamame
  • ¼ cup plus 1 tablespoon extra-virgin olive oil, divided, plus additional for drizzling
  • 1 cup packed baby arugula, divided in 2 piles
  • ¼ cup Parmigiano-Reggiano
  • 1 teaspoon grated lemon zest
  • ½ teaspoon fresh lemon juice
  • ½ tsp kosher salt
  • ⅛ tsp pepper
  • ¼ cup mint to garnish
  • olive oil for drizzling
  • sliced baguette
Instructions
  1. Preheat oven to 375°F with rack in middle.
  2. If edamame is still in the pod make sure you take the beans out of the pods before using. Very important!!
  3. Cook edamame beans in salted boiling water, uncovered, until tender, 3 to 4 minutes, then drain and transfer to an ice bath to stop cooking.
  4. Pulse edamame beans in a food processor until very coarsely chopped, then transfer half of mixture to a large bowl.
  5. Add ¼ cup olive oil, ½ cup arugula, parmigiano reggiano, lemon zest & juice, ⅛ teaspoon salt, and ½ teaspoon pepper to edamame in processor and purée until smooth.
  6. Add smooth mixture into the bowl with chunky edamame..
  7. Coarsely chop remaining ½ cup arugula and gently fold into edamame mixture.
  8. Cut bread 16 diagonal slices (1/3 inch thick) from baguette and put in a 4-sided sheet pan. Drizzle with remaining tablespoon oil. Bake until pale golden and crisp, 8 to 10 minutes.
  9. Spoon edamame mixture onto baguette toasts, then drizzle with oil and top with mint.
Notes
It's VERY important that you remember to remove edamame beans from pods. The outer shell is super coarse & stringy and not something you want to eat.
I buy the pre-shelled edamame from Trader Joes. You can find both fresh or frozen edamame beans and they are inexpensive.
Don't skip out on the mint as garnish!! This is not a garnish you want to miss out on. It really brings the recipe all together for me.

A SIMPLE DRIZZLE OF BALSAMIC GLAZE AND A FEW BASIL LEAVES HAVE A BIG IMPACT ON THE FINAL PRESENTATION

Bur-ra-ta translated from Italian literally means ‘buttered’. It is a a typical product of Puglia, a region in the south of Italy and it is absolutely one of my favorite cheeses. Burrata is a fresh Italian cheese made from a combination of mozzarella and cream.  The outer shell is solid mozzarella, while the inside is a combination of both mozzarella and cream, producing a unique, soft texture. It’s so delicate and just plain decadent! Even

though I’ve been cooking with and enjoying Burrata for years, there was a time when I not only had no idea what it was, but also didn’t see what all of the fuss was about. Alas, I’m reminiscing about my younger years, when I was just beginning to tap into my love for cooking.  I’ll share with you my highly embarrassing first experience with one of my favorite indulgences.

I had just returned from a 3 day work trip which included lounging on the beach in Hawaii, swimming with sea turtles, a shopping spree for my new bachelorette pad and epic local food. Oh, and I can’t forget that I was able to bring my best friend along with me for my layover. She came over to my apartment for a salad and we ended up in Hawaii 10 hours later. True story. How cool is that?

Life was fantastic to say the least. I was for the first time ever living by myself (sans room mates), making enough money to travel every other month and had a career & lifestyle I felt very lucky to have. Ultimately, I felt like everything was coming up Sacha and  that I was exactly on the path I was supposed to be on. Sorry! I’m just trying to set the scene and help you understand where I was in my life but I’ll get to the point.

I returned from the grocery store with burrata in hand(fancy), poured myself a glass of vino and felt like a freaking grown up.  My bubble burst when I attempted to slice the cheese and was horrified to see all of the creamy liquid ooze out of the burrata. I had never seen this happen before. This isn’t normal right? What the H#%L! The cheese had gone bad! The grocery store had sold me rotten cheese. RUDE!

After feeling sorry for myself for a minute I took a serious page out of my mothers book and marched back over to the grocery store with my receipt and evidence of said rotten cheese. The kind gentleman in the deli gave me a look of pity and was thinking what I can only imagine was  ‘Awwww look at this poor clueless, naive girl.’ He continued to tell me that yes, Burrata was in fact supposed to be soft and creamy on the inside. That is whyyyy people actually buy it. I’m fairly certain my face turned as red as the purse I was carrying. If I had a tail it would of been creeping so far between my legs it would disappear. Ohhh my, how the self proclaimed ‘grown up’ just got taken down a few notches. I was so grateful to the kind gentleman for being discreet and not schooling me in front of the entire deli.

Now I look back on that day fondly and it always makes me smile. I’ve come a long way in the kitchen from that day but I will forever be learning. It wasn’t my first humbling experience and I’m sure it won’t be my last. Until then I’m going to keep eating this salad all year round.

Heirloom Tomato Salad with Burrata

Ingredients
  • 1 pound heirloom tomatoes, cut into bite sized pieces
  • 1 package burrata with 2 balls
  • ½ cup basil, sliced into little matchsticks
  • 4 cloves garlic, minced
  • 1 tbsp good quality olive oil
  • sea salt & freshly ground pepper
  • balsamic glaze to drizzle
Instructions
  1. Cut the clean heirloom tomatoes in bites sized pieces.
  2. Add garlic, basil, olive oil and S&P.
  3. Mix Ingredients
  4. Cover & place in the fridge to allow the flavors to mix, preferably for an hour at least.
  5. Remove from fridge and using a slotted spoon arrange on serving platter or individual small plates.
  6. Add pieces of burrata to the top of the tomato salad and garnish with basil.
  7. Drizzle with balsamic glaze

THIS IS WHAT PEOPLE WOULD CALL A ‘PANTRY PASTA

Wondering what to do with that day old baguette? This pasta totally transpired on a whim because I was absolutely sick of throwing things away!!! I feel like every week I’m throwing out veggies or leftovers we thought we would eat. It really irritates me. This year I’m really trying to use what I have, with efforts to reduce the amount of waste I produce on a daily basis. I’m making a conscious effort to think of ways to use whatever produce or ingredients I have at home before heading to the market. It’s been such a fun challenge and definitely something I will continue to adopt into my everyday routine.  I really enjoy how it challenges me to get creative and be resourceful with what I have on hand.

The first thing I saw in my kitchen were two half-loaves of bread that I had made a few days prior. I would have to use them or toss them, so I opted to make my own herbed croutons and add them to a simple & slightly spicy pasta. I knew Rez would love it so much that it may be his new favorite dish of mine. I tease Rez that he could survive on salami & olives alone, but its actually true. I’ve never seen someone love something so much, that eat it every single day, often twice. That’s commitment.

As I write this post I can’t help but think, this would be something you would crave after a bad hangover. Just hear me out! We’ve all had those nights and if you’re like me, they will ruin your entire day. I can’t do it like I used to, that’s for sure.

This is what a hangover looks like when you’re 29: You wake up after a vivid dream of chugging a massive bottle of water, pop 2 Advils, drink more water, announce to whoever is around that ‘YOU’RE DYING’ and ‘you’re never ever drinking again, no matter how many times you’ve said it before’. Then you’ll probably take a nap, drink more water, stare at yourself in the mirror for far too long, willing it to stop. Fall asleep again somewhere else in your house (like the couch), maybe leave your apartment to grab something to eat (the struggle is real) and watch some netflix. Eff it, just start a freaking marathon because who are you kidding the day is over. After you’ve successfully lost the entire day to your hangover, you suddenly get this burst of energy and are famished.  What to make? What do you want? THIS pasta is what you want!

It’s also good for any other day but this will cure your adult hangover just nicely!

Rustic Pasta with fresh Bread Crumbs

A nice and hearty dish. It's very simple and delicious. Great way to use leftover or stale bread.

Ingredients
  • 3 cups of bread, cut into small cubes
  • 3 tbsp olive oil or butter
  • 1 tbsp fresh rosemary, minced
  • 1 tbsp fresh thyme, torn
  • 1 tsp garlic powder
  • 1 pound dry spagetti
  • 3 ounces spicy salami(like Hungarian or Genoa), diced
  • 1 red pepper, finely diced
  • 4 cloves garlic, minced
  • pinch crushed red pepper flakes
  • ⅓ cup black kalamata olives
  • ½ cup freshly grated parmesan
  • kosher salt & freshly ground pepper to taste
  • olive oil for drizzling
  • parsley for garnish
Instructions
  1. Preheat oven to 350 degrees.
  2. Mix melted butter/olive oil, garlic powder, rosemary, thyme and salt until garlic powder is dissolved.
  3. Toss butter mixture with cubed bread in a medium bowl until cubes are evenly coated.
  4. Spread coated bread cubes on a cookie sheet and bake for 10 minutes.
  5. Stir the croutons and return to the oven for 10 more minutes.
  6. Remove when they are crisp & golden brown.
  7. Bring a large pot of well-salted water to a boil over high heat
  8. Meanwhile, heat the olive oil+red pepper flakes in a 12-inch skillet over medium-low heat, stirring occasionally with a wooden spoon, until the pepper flakes are sizzling, about 5 minutes.
  9. Turn the heat up to medium, add the salami+pepper and sautee for about 3-5 minutes.
  10. Add the breadcrumbs+olives+garlic and stir for 1 minute to combine.
  11. Remove from the heat.
  12. Cook the pasta in the boiling water according to package directions until al dente.
  13. Reserve ½ cup of the cooking water and drain the pasta. Immediately return the pasta to the pot over medium-low heat.
  14. Add the grated parmesan+1/2 the breadcrumb mixture and toss to combine. If necessary, add some of the reserved cooking water to moisten.
  15. Season to taste with salt & freshly ground pepper. Serve sprinkled with the remaining breadcrumbs+parsley.
Notes
Be careful not to burn the croutons. Use my timeline simply as a suggestion because every oven is different.

This is hands down the recipe I’ve made the most in my kitchen. It has few ingredients, not a lot of preparation and is very simple to execute well. I have made this so many times; I could make it in my sleep. This simple recipe is consistently delicious. I’m never disappointed when I make this for lunch or dinner.

This is one of those recipes that is so quick to produce but tastes like you’ve been cooking all day. It makes me fall in love with my simple pesto pasta, every damn time!  I cannot stress to you how much I love this recipe. This is a recipe on my blog you need to have in your repertoire and stat!

FROZEN PEAS ARE GREAT TO ALWAYS HAVE IN YOUR FREEZER. THEY ARE PERFECT IN THE SIMPLE CLASSIC!

There is no real cooking involved in this dinner, seriously! You make the pesto in the food processor and boil the pasta & peas in the same pot, which makes for a super easy and low maintenance clean up! Remember that the peas don’t take as long as the pasta to cook, frozen peas only take 3 minutes, so pop them in when your pasta is almost al dente. Be really careful not to overcook your pasta. You want the noodle to be firm to the bite because the cooking process will continue over medium/low heat, when you toss the pasta with pesto.

Simple Pesto Pasta with Peas

Ingredients
  • 3 cups basil(sweet not thai), packed
  • ⅛ cup pine nuts
  • ⅛ cup walnuts
  • 2 cloves garlic, coarsely chopped
  • ¾ cup GOOD Olive Oil
  • ½ cup parmigiano reggiano, freshly grated
  • ¼ tsp freshly ground pepper
  • salt to taste
  • 454g package pasta of your choice
  • 1 cup peas
Instructions
  1. Bring a large pot of salted water to a boil.
  2. Combine all ingredients except for olive oil and parmigiano reggiano in the food processor and pulse.
  3. With the motor running, slowly pour the olive oil into the feed tube and process, stopping to scrape the sides of the bowl as needed.
  4. Transfer to a bowl and stir in parmigiano reggiano.
  5. When the water comes to a boil add pasta and stir with a wooden spoon.
  6. Add frozen peas when the pasta is a few minutes from being al dente. Read the cooking instructions on the back of the pasta because different kinds vary. Do you not overcook! The pasta is going to cook a little bit more when we toss it with pesto so it's better to have it slightly undercooked, if anything. Reserve a cup of pasta water. You can use this to thin out your sauce if need be.
  7. Drain the pasta & peas, rinse with cold water.
  8. Return the pot to stove over medium low heat. Add 1 tbsp of pesto and 1 tbsp of pasta water and let the bottom of the pot heat up.
  9. Add pasta and mix with hot pesto slowly strip in the remaining pesto, thinning out the sauce with pasta water 1 tbsp at a time
  10. Top with basil and a sprinkle of parmigiano reggiano
  11. Enjoy!
Notes
*Reserve a cup of pasta water. You can use this to thin out your sauce.
*You will need a total of 1 cup prepared pesto for this recipe.
*Be careful not to overcook the pasta!!! It should be slighty undercooked when you rinse the pasta. Remember that we will continue the cooking process over medium/low heat when we toss the pasta with pesto.

I was recently asked what my favorite comfort food was and it didn’t take me long to decide on soup. I have no real favorite, although I’m fond of Cream of Wild Mushroom  and Lazy Pea Soup with Mint & Crème Fraîche; any bowl of delicious soup will do the trick. This lemony chicken soup is my take on the soups I enjoyed so much in Greece & Albania.

I have this habit of ordering soup at restaurants, especially when I’m traveling abroad. My fiancé teases me about it, mostly when it’s unpractical like in 32C/90F heat. The truth is I love learning about different cultures, regions, countries & their traditions by tasting their soups. I think you can learn a lot about a cook by what kind of soup they are proud to make. It often doesn’t change much over the years and usually tells some sort of story.

One memory in particular stands out for me. Rez & I were vacationing in Albania, where my fiancé spent his childhood. We were at the start of a road trip down south and were staying the night in this remote village in the mountains, called Kaninë. The village had only one small restaurant/bar which we were escorted to by our sweet host Jimmy. This restaurant had no name, no menu and one of the best soups I’ve tasted in my life (also with no name).

Everything served in the restaurant was grown, raised and harvested on their property (rakia and wine included). You quite literally could taste Albania in a bowl! There is nothing more authentic than that. Some people collect magnets or shot glasses from their travels, I happen to collect memories & stories of the soups I’ve tasted.

Its easy make something wonderful when you have deep pockets and access to the latest & greatest ingredients of the moment. What really makes an outstanding cook is someone who creates something extraordinary with limited resources and whatever ingredients they have. The best cooks can make something out of nothing. I’ve learned that outstanding food doesn’t have to be expensive.

This Speedy Greek Style Chicken & Lemon Soup is a constant when I’m starting to feel sick. It’s quick, easy and you can make a big batch so you don’t starve when your cold/flu hits full force. I think it’s really important to use fresh herbs in this recipe because dill and parsley are both delicate herbs and their dried counterparts don’t have much taste. Lemon is a stand out in this soup for sure and I like to add a little extra lemon zest or minced preserved lemon to really amp up the flavor.

Ingredients
  • 8 cups chicken stock, preferably homemade
  • 1 heaping cup shredded rotisserie chicken
  • ⅓ cup uncooked long grain basmati rice
  • 2 large eggs
  • 1 cup celery, diced
  • 1 cup carrot, diced
  • 1 cup onion, diced
  • 3 tbsp olive oil
  • ¼ cup fresh lemon juice and add more to taste
  • 2 bay leaves
  • 1 tbsp salt
  • 1tsp freshly ground pepper
  • ½ cup fresh dill
  • ½ cup flat leaf Italian parsley
  • serve with lemon wedges and fresh herbs
Instructions
  1. Heat the oil in a large skillet over medium-high heat. Add the onion and cook, stirring, until translucent, about 6 minutes.
  2. Add the carrot + celery and cook for 3 minutes.
  3. Add the bay leaves + chicken stock + rice, switch to high heat and bring to a boil.
  4. Reduce the heat and simmer until the rice is almost cooked through, about 20 minutes.
  5. Add the chicken and reduce the broth to a low simmer.
  6. In a medium sized bowl, beat the lemon juice, eggs, and pepper together.
  7. Ladle 2 cups of hot broth into a measuring cup with a pourable spout. While whisking, slowly pour the 2 cups of broth into the egg mixture.
  8. Pour the egg mixture back into the pot with 1 tablespoon of salt. Stir well to blend. Add fresh dill and parsley and give a quick stir.
  9. Ladle soup into bowls and garnish with fresh herbs and/or lemon wedge.
Notes
Don't forget to remove the bay leafs before serving!
I really like a ton of lemon in my soup so I add more lemon juice. I sometimes add ½ cup instead of ¼ cup. Taste as you go so you don't add too much!
Sometimes I add 1 tsp of lemon zest of preserved lemon rinds to amp up the lemon flavor.
